Created by Maurice Hennessy in 1870 for his circle of friends, Hennessy X.O was the first Cognac classified as X.O, or “extra old”, because of its extended aging process.
A blend of 100 eaux-de-vie, its deep amber color is a sign of its intensity. At once rich and robust, it constantly reveals layers of flavors with distinctive persistence on the palate.
Léopold Gourmel Age des Fleurs 15 Carats Cognac is an XO - a presents a fine and elegant Cognac. A great cognac for the hunting season, pairing delightfully with game meat and tender red wines. This is a truly traditional cognac - no caramelized tones, pure vintage, strictly no additives, aged in un-toasted extra fine grain French oak casks, and never chill-filtered. An adventure for the taste buds...
A velvety softness unfolding with a range of vanilla aromas.
~ Mouth : at first, warm and rich, silky on the tongue, velvety in the throat, beautiful, long finish with hints of linden and honeysuckle. ~
~ Pairings : after a meal with game or red meat, or to prolong refined red wines. ~
Léopold Gourmel Extra Age des Epices 20 Carats is a Tres Vieux Cognac, very old. You might want to have this cognac after a good meal, with a good Burgundy wine. This Cognac matures very slowly in oak barrels, a slow pace is important for this product. After 25 years of ageing a cask stops bringing more aromas to the cognac - but after 20 years a Cognac reaches a certain peak. This Extra Cognac is pure vintage, no additives, aged in un-toasted barrels; and certainly not chill-filtered
Ample and peppery strength, rich with enveloping depth.
~ Mouth : rich, powerful, spicy on the tongue, finish with notes of cloves, ginger, gingerbread. ~
~ Pairings : after a menu of several dishes served with rich and sun-filled wines. ~
The Léopold Gourmel XO Age du Fruit 10 Carat Cognac is an old XO Fin Bois Cognac. At 41 % ABV. It matches well after white wines, after white meat or fish - or even Asian kitchen. The Age Du Fruit is produed without additives, aged in un-toasted French oak casks; never chill filtered - and certainly no artificial wood notes, and not caramelized. French Wine review, September 2006: "Nice and well balanced".
The flavorful roundness of candied fruit is stressed by a hint of citrus fruit.
~ Mouth : unctuous, structured, fantastic finish, candied fruit, citrus fruit, apricot, orange zest, lemon. ~
~ Pairings : white meat, high-end fish ~
Paul Beau's Hors d'Age is the most decorated cognac that we know of. It has won 5 Gold Medals at Concours G̩n̩ral de Paris since 2000, plus numerous medals at the IWSC. This year, 2009, Paul Beau was awarded a special prize in Paris for the consistency of their products. An exceptional cognac, with plenty of "rancio‰ flavour.
A truly superlative VSOP from boutique producer Paul Beau. Rich, perfectly balanced and incredibly complex for 'only' a VSOP - we're sure that some much older cognacs went into this cuvee. The delicate balance of flavour and finesse is extraordinary at this level. Clearly the work of a blender at the very top of his game.
