Klipsun Cabernet Sauvignon 2016 750 ML
Handpicked, crushed, de-stemmed and fermented in open top fermenters and hand-punched down 2-3 times daily. An average of 10-14 days “on skins” and free run juice was kept separate from the press wine. Premium French oak barrels were selected with very tight grain wood that was air dried for a longer time than normal. A portion of the wine was allowed to spontaneously ferment, while other fractions were fermented with selected natural yeasts. No fining and only course filtration so the wine does not appear cloudy in bottle, but not fine enough to remove flavor & mouth feel components.
Wine & Spirits Magazine named Klipsun Vineyard one of the “25 Great Vineyards of the World”, an immense achievement to be listed with DRC La Tache, To Kalon, Sassicaia, Vega Sicilia, Almaviva, Lafite Rothschild, Rochioli and Shafer Hillside (Sunspot) just to name a few.
The 2016 Cabernet Sauvignon is brilliant stuff and comes from the Klipsun Vineyard on Red Mountain. A blend of 85% Cabernet Sauvignon, 10% Merlot, and 5% Syrah, aged 20 months in new oak, its deep purple color is followed by powerful notes of currants, graphite, toasted spices, and scorched earth. These give way to a full-bodied, concentrated, yet beautifully balanced Cabernet that has fine tannins, terrific purity of fruit, and a great finish. It needs 2-3 years of bottle age but is a 20+ year wine

Color: Dark garnet verging on purple
Aroma: An intense chocolate and boysenberry aroma that is melded with French oak aromas of mocha and spice. Using 100% new oak every year sets off the intense Klipsun fruit aromas in a way that can only be produced by a great vineyard.
Taste: Mouth coating intensity, ripe blackberry flavors with a hint of herbs that is the hallmark of wines from Red Mountain. While the wine is big & rich its pleasant mouthfeel is a result of carefully managed tannins which are evident, but seamless. If you prefer wine with forward or upfront fruit, it could be consumed in the near term, or if you like more cedar and cigar box aromas & flavors it could be aged for 10 to 15 years.
Aging: 20 months in 100% new French Oak mostly medium toast+ 14 months in bottle.

Your wines will be shipped by us in perfect condition and any damage incurred due to weather is not covered by the shipping company insurance, or guaranteed by us. We will gladly store your wine in our temperature-controlled cellar until the weather is more suitable for shipping.
