The more central portions of the SRH (S\u0026amp;B, Fiddlestix) were\u003cbr\u003eharvested in mid-September, while the western portions (Radian, Bentrock) hung\u003cbr\u003euntil early and even mid-October. Low yields and small berries brought\u003cbr\u003econcentration without excess weight, while steady maritime influence preserved\u003cbr\u003eacidity and structure\u003cbr\u003eOUR WINEMAKING\u003cbr\u003eWe picked individual blocks in separate passes with field sorting. Within hours,\u003cbr\u003ethe grapes were gently pressed, the juice settled, then put down to barrels for\u003cbr\u003eprimary fermentation, which took place with native yeasts.
